The recipe that I reviewed last week was Sweet Potato and Black Bean Casserole. I had to make quite a few modifications to the recipe because I can’t have garlic, or tomatoes, or spicy stuff. I suppose in that sense I ended up taking out a lot of the flavor from the recipe, but sometimes that’s just the way it goes. Still I did enjoy the recipe. I wish I had cooked my sweet potato a little more before cutting it up and putting it in the casserole though. I was afraid it would get to mushy to cut, but it ended up being a little undercooked in the end. Not bad, I could eat it fine, but that would have made it a little better. What I loved about this recipe was that it was very filling while being really low in calories. I did use my low cal corn shells which made a difference, but still. It’s so rare to find something that tastes good, fills you up, and yet is still low in calories. That’s a big win in my book!
