Meal Plan Monday #8

In fact last week was so bad that I didn’t eat half of what I had planned because I just couldn’t handle it. That was a big bummer too because I ended up not getting to try the Party Veggie Pizza that I was so excited about. For this week I tried to plan meals that contained food that I knew would be easier for me to stomach. I also have quite a few leftovers from last week which should help make less work allowing me to take a bit of a break.
How do you single moms do it? I only have one little guy and I’m exhausted. I’ve always been awed by how single moms do it, and that was ever before I became one myself. Being a mom is a hard, although very rewarding, job and it’s just that much harder when you’re on your own. Luckily I have great family support, but they can’t be there all the time.
Meal Plan – Week of May 12, 2014
Monday – Hot Dogs, Baked Beans, and Applesauce Salad
Tuesday -Leftover Grands Pizzas
Wednesday – Leftover Easy BBQ Chicken Sandwiches, Corn, and Pear Slices
Thursday – Scrambled Egg Roll-ups
Friday – Party Veggie Pizza
Saturday – Memorial Day Party – We’ll have dinner at the party
Sunday – Chicken Nuggets, Baked Sweet Potato, and Peach Slices
