Meal Plan Monday #8

Sharing is caring!

Meal Plan Monday
Technically I have only been doing the single mom thing for a few months.  In reality I have been doing it, for the most part, for about a year and a half since we only saw Jason twice a week, and he only helped out so much.  Still being the only parent on call around the clock has finally gotten to me.  Although I think it’s the doing it while working so much that has been the worst.  Whatever the exact reason it has truly worn me down.  Stick a fork in me I am so done!  It’s gotten to the point that I have been so exhausted this week that my stomach has not been nice to me.

In fact last week was so bad that I didn’t eat half of what I had planned because I just couldn’t handle it.  That was a big bummer too because I ended up not getting to try the Party Veggie Pizza that I was so excited about.  For this week I tried to plan meals that contained food that I knew would be easier for me to stomach.  I also have quite a few leftovers from last week which should help make less work allowing me to take a bit of a break.

How do you single moms do it?  I only have one little guy and I’m exhausted.  I’ve always been awed by how single moms do it, and that was ever before I became one myself.  Being a mom is a hard, although very rewarding, job and it’s just that much harder when you’re on your own.  Luckily I have great family support, but they can’t be there all the time.
