It is hard to believe that Nick is already in his 5th week of kindergarten. Where has the time gone? Nick has being doing great in school. He loves every minute of it which is why I felt that I had to go to the parent meeting recently about adding a new kindergarten teacher and the discussion on how they would pick which kids from each class to move. It’s wonderful for the school that Nick’s class is so large, and more kids are still coming in, but for him I didn’t think a teacher switch would be a good idea. I had it all worked out with my mother that she would come and watch Nick while I went to the meeting, but I realized I had forgotten to plan out one important part when she called me the morning of the meeting and asked what I was making for dinner. Dinner?
I have to admit that I do not often cook a regular dinner every night. Nick has always been a grazer, and the consistent food routine with school has not changed that fact even though I had hoped it would. He comes home at 4:00 in the afternoon and is ready to eat. At that point I have two choices. Make him wait until dinner time when he’ll have reached a point of extreme crankiness from hunger that will cause him to not eat at all, or let him eat the dinner he wants at 4:00 and throw something together for myself later. Every good mom knows to pick her battles, and that is one I have learned to let go.

Since this is our daily situation I do not have a lot of food in the house meant to feed more than one, and what I had wasn’t all that exciting either. Certainly not what I wanted to feed my mother as a thank you for rushing to my house after work to help me out. With only so much time to spare I ran down the street to Kroger to see what I could get to make before I needed to go pick Nick up at school.
I knew I would not have a lot of time to cook between getting Nick home and settled and getting myself ready to go. The meeting was at 6:00, so we had to eat early. I wandered the aisles at Kroger hoping for some inspiration, and I got it in the frozen food aisle when I spotted a box of Michael Angelo’s Lasagna with Meat Sauce. It was absolutely perfect and I wondered why I hadn’t thought of it before! With fresh beef, vine-ripened tomatoes and fresh herbs that are sautéed and layered with firm 100% semolina lasagna and topped with imported Pecorino Romano cheese it was the perfect way to make a nice meal for us. It was as good as me making something myself from scratch and best of all was the fact that I could put it in the microwave while I got ready to go!
Our Michael Angelo’s Lasagna with Meat Sauce turned out to be a the perfect go-to meal for us. It was fast and easy to cook (only 22 minutes in the microwave!) and it tasted so good. I had almost gone with Michael Angelo’s Shrimp Scampi, which I am sure would have been amazing too, but I knew we couldn’t go wrong with a good old traditional lasagna and I was right! To add a little more to the meal I quickly threw a salad together from what I had at home. The entire meal worked out perfectly, and we both loved it. We couldn’t have asked for a better dinner. It tasted so good!
