Turkey is the main focus of Turkey Day, but sometimes you find yourself eating it for days upon days after the holiday is over. If you’re tired of reheated turkey than change things up, and use some of your other leftovers as well, with this easy Thanksgiving leftover casserole recipe!

I love leftover turkey. My favorite way to enjoy it is in a turkey sandwich (deli meat simply can’t compare!), but there are many times that I can’t eat it fast enough before it starts going bad. That’s when this Thanksgiving leftover casserole recipe really comes in handy.

Our family has always loved this casserole. It tastes so good, and it is so easy to make. It’s not only a great way to use up those Thanksgiving leftovers, but it’s a wonderful meal for the day after Thanksgiving too.

Ingredients needed for this Turkey leftovers Casserole

This casserole helps to use up the Thanksgiving turkey as well different Thanksgiving side dishes. The great thing is that you can modify a lot of this recipe to work with what you have.

This is truly a dump casserole, so take what you have and dump it in. Have a little green beans and a little bit of carrots left? Dump them in. Only have a lot of carrots? Than use those.

I’m going to list the main ingredients, and some modifications if you don’t have the ingredient, but truly work with what you’ve got! The idea is to get rid of those leftovers, not make more!

  • 2 Cups of cooked turkey
  • 2 Cups of mixed vegetables – or you can use a large bag of frozen mixed vegetables
  • 1 1/2 Cups of gravy – or you can purchase a jar of gravy
  • 2 Cups of stuffing – or you can use a box mix

How to Make Leftover Turkey Casserole with Stuffing

After spending all of Thanksgiving, and maybe even days before, cooking no one wants to spend any time on Black Friday cooking. That’s the day to relax and have fun! This recipe is an easy way to get a nice and warm dinner on the table though that hardly takes any work.

As I mentioned before, this is basically a dump type of casserole. You truly see that with this step. What you want to do is add all of the vegetables you are using into a 2 quart casserole dish.

Next you want to add the turkey into the the casserole dish. If your turkey is still in large pieces make sure to chop it up into bite size pieces first.

Finally add the gravy to the casserole dish. Then mix all of the ingredients together.

At this point you actually are almost all done. All you have left to do is add the stuffing to the top of the casserole. You want to make sure that it covers the entire area.

If you are using a box mix you don’t need to follow the instructions on the box. Simply add two cups of boiling water to the mix. Then stir until the stuffing mix is moist. At that point you can add it to the top of your Thanksgiving leftover casserole.

Now place the casserole dish in the oven and bake f

or an hour at 350. You’ll know when it’s done because the stuffing on top will be crisp and toasted.

To make the casserole stretch farther you can serve it with other Thanksgiving sides that you have left. Since this is made from all of your Thanksgiving leftovers it’ll still taste great with the other leftovers such as your slow cooker cheesy potatoes or applesauce salad. Plus after don’t forget to serve the rest of you pumpkin pie without eggs!
